Healthy (and Tasty!) Cooking

Being retired has given me some free time to start cooking again!  We are doing healthy cooking around this house these days.  Here are some of our latest dishes.

Quinoa with mango, black beans, red pepper, cilantro, and a vinegar dressing.

Brown rice, seasoned black beans, and chicken with an apple salsa.

Asian lettuce wraps.

Adapted from a dish we had in Peru - chicken salad over avocado.
